Chocolate, Bacon & Porter Muffins
- 1/2 cups Unsweetened Cocoa Powder
- 1 cup Flour
- 3/4 cups Sugar
- 1 teaspoon Baking Powder
- 1/4 teaspoons Smoked Paprika
- 1 whole Egg
- 1/4 cups Canola Oil
- 1/2 cups Dark Chocolate Chips
- 3/4 cups Porter, With Smoked Notes (I Used Alaskan Brewing Smoked Porter)
- 3 strips Bacon, Cooked, Chopped
- Preheat oven to 400u0b0F.
- In a large bowl, combine the cocoa powder, flour, sugar, salt, baking powder, and smoked paprika. Whisk until well combined.
- In a separate bowl, beat the egg and oil. Make a well in the dry ingredients and add the egg/oil, chocolate chips and the beer. Stir until combined.
- Spray muffin tins with butter-flavored cooking spray (or line with muffin tins). Add the batter to the muffin tins until about 2/3 full. Top with the chopped bacon, evenly distributed between the muffin tins.
- Bake for 18-22 minutes or until the top springs back when touched.
- Makes 8 muffins.
