Zucchini And Beef Italiano

  1. Cook zucchini in boiling salted water 2 or 3 minutes. Drain well. Cook ground beef, onion, garlic and seasonings in skillet until onions are transparent. Stir in cooked rice and tomato sauce. Blend cottage cheese and eggs. Put half of zucchini slices in buttered, shallow two quart casserole; spoon on ground beef mixture. Spread cottage cheese over beef. Top with remaining zucchini. Sprinkle with cheddar cheese.
