Cinnamon Chocolate Oatmeal Cookies
- 1 cup Butter
- 1 teaspoon Vanilla Extract
- 1 cup Sugar
- 2 whole Eggs
- 1 cup White Flour
- 3/4 cups Whole Wheat Flour
- 3/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1-1/2 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Ground Ginger
- 1 cup Pecans, Finely Chopped (OPTIONAL)
- 1/2 cups Semi-Sweet Chocolate Chips
- 1/2 cups Cinnamon Chips
- 2 cups Rolled Oats, Uncooked
- Cream together butter, vanilla, and sugar. Add eggs one at a time. Sift together dry ingredients (all the remaining ingredients) and gently incorporate into the wet ingredients. Using a medium-sized cookie scoop (1 1/2-2 tablespoons), drop onto parchment-lined cookie sheets and bake for 10 minutes at 350u0b0F.
- These are very dense and grainy cookies. If you prefer lighter/fluffier cookies, substitute 1 cup of white flour for the 3/4 cup whole wheat and use 1 3/4 cups oats and 3/4 cups chocolate chips. The nuts are optional!
