Cinnamon Chocolate Oatmeal Cookies

  1. Cream together butter, vanilla, and sugar. Add eggs one at a time. Sift together dry ingredients (all the remaining ingredients) and gently incorporate into the wet ingredients. Using a medium-sized cookie scoop (1 1/2-2 tablespoons), drop onto parchment-lined cookie sheets and bake for 10 minutes at 350u0b0F.
  2. These are very dense and grainy cookies. If you prefer lighter/fluffier cookies, substitute 1 cup of white flour for the 3/4 cup whole wheat and use 1 3/4 cups oats and 3/4 cups chocolate chips. The nuts are optional!
