Double Raisin Oatmeal Cookies With Flax Seeds
- 1 cup All-purpose Flour
- 1/4 cups Whole Wheat Flour
- 1/4 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 2-1/2 cups Quick Cooking Oatmeal
- 1/2 cups Flax Seeds
- 1 teaspoon Salt
- 1 cup Butter Flavored Crisco Or Butter
- 1 cup Granulated Sugar
- 1 cup Light Brown Sugar
- 2 whole Eggs
- 2 teaspoons Vanilla Extract
- 1/2 cups Golden Raisins
- 1-1/2 cup Raisins
- Preheat oven to 350u0b0F.
- Mix together flours, baking soda, baking powder, oatmeal, flax seeds and salt in a large bowl.
- Cream together Crisco/butter and sugars on high speed till light and fluffy. Add eggs one at a time, mixing well after each egg. On low speed, add vanilla. Gradually stir in dry ingredients. With a wooden spoon, mix in raisins.
- Lightly grease cookie sheets. Drop tablespoon-sized dough balls onto cookie sheets. I can fit twelve cookies onto a sheet. Bake in the preheated oven for 15 minutes till lightly browned. Let cool for a few minutes then carefully place on a cooling rack.
