Chicken And White Bean Soup
- 2 Tablespoons Olive Oil
- 1 whole Onion (large, Diced)
- 5 cloves Garlic, Minced
- 1 teaspoon Salt
- 2 teaspoons Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Oregano
- 8 cups Chicken Stock
- 4 cups Shredded Chicken
- 2 cans White Northern Or Cannellini Beans - 15 Oz. Cans, Rinsed And Drained
- 2 cans Corn - 15 Oz. Cans, Rinsed And Drained
- 2 cans Fire Roasted Diced Green Chilies - 4 Oz. Cans
- 2 cans Salsa Verde - 7 Oz. Cans
- In a large stock pot over medium heat, saute onion in a couple of tablespoons olive oil until translucent. Add garlic, salt, cumin, chili powder, and oregano and saute for a couple of minutes until garlic is soft and spices are fragrant. Add stock and remaining ingredients and bring to a boil. Cover and lower heat and let simmer for a couple of hours. Stir occasionally.
- Serve with shredded cheddar, sour cream, cilantro and tortilla chips.
