Chez Basic Favorite Indian Curry Base
- 4 slices bacon, finely chopped
- 1/4 c. finely chopped onion
- 1/4 c. finely chopped celery
- 1/2 clove garlic, crushed
- 2 Tbsp. salad oil
- 1/4 c. flour
- 1/4 c. curry powder
- 3 Tbsp. tomato paste
- 1 1/4 c. water
- 1 Tbsp. lemon juice
- 1/2 c. applesauce
- 1 Tbsp. sugar
- 2 chicken bouillon cubes
- 1/4 tsp. salt
- 1 clove garlic
- 2/3 c. dry white wine Neufchatel or Cote
- 1 c. grated imported Swiss cheese *
- 1 c. grated imported Gruyere cheese*
- 2 1/2 tsp. cornstarch
- 2 Tbsp. Kirsch
- 1/8 tsp. salt (optional)
- dash of pepper (optional)
- dash of nutmeg (optional)
- French bread cubes (about 1 1/2-inches)
- *Or use 2 cups grated domestic Swiss cheese.
