Cinnamon Roll Muffins

  1. In a bowl combine brown sugar, baking soda, salt, vanilla and egg. Add in the buttermilk. Mix together with a fork. Add the flour. Stir until it is well combined. Be careful not to over mix!
  2. Turn the dough onto a floured surface, and knead for about a minute. Roll the dough into a 12x24 inch rectangle.
  3. For the filling, spread the butter over the dough. Sprinkle with the brown sugar and cinnamon.
  4. Roll the dough into a log and stretch it slightly. Cut into 2-inch pieces. Put them into a greased muffin tin. Bake for 15 minutes at 375u0b0F.
  5. While they are baking, you can put together the icing. Add the milk and vanilla slowly to the sugar. Drizzle over the muffins!
  6. Enjoy!
