Cinnamon Roll Muffins
- FOR THE DOUGH:
- 1/2 cups Brown Sugar
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Vanilla
- 1 whole Egg
- 1 cup Buttermilk
- 3 cups Flour
- FOR THE FILLING:
- 2 Tablespoons Butter, At Room Temperature
- 2/3 cups Brown Sugar
- 1 teaspoon Cinnamon
- FOR THE ICING:
- 2-1/2 Tablespoons Milk
- 1/4 teaspoons Vanilla
- 1 cup Powdered Sugar
- In a bowl combine brown sugar, baking soda, salt, vanilla and egg. Add in the buttermilk. Mix together with a fork. Add the flour. Stir until it is well combined. Be careful not to over mix!
- Turn the dough onto a floured surface, and knead for about a minute. Roll the dough into a 12x24 inch rectangle.
- For the filling, spread the butter over the dough. Sprinkle with the brown sugar and cinnamon.
- Roll the dough into a log and stretch it slightly. Cut into 2-inch pieces. Put them into a greased muffin tin. Bake for 15 minutes at 375u0b0F.
- While they are baking, you can put together the icing. Add the milk and vanilla slowly to the sugar. Drizzle over the muffins!
