Biscuits And Homemade Gravy
- FOR THE BISCUITS:
- 2 cups Flour
- 2 teaspoons Sugar
- 1 teaspoon Baking Soda
- 3 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 stick Butter
- 1 cup Buttermilk

- FOR THE GRAVY:
- 1 pound Ground Sausage
- 3 Tablespoons Flour
- 2 cups Heavy Cream Or Milk Or Combo Of Both
- 1 teaspoon Black Pepper
- 1/2 teaspoons Salt
- 1/4 teaspoons Freshly-ground Nutmeg
- For the biscuits:
- In a large bowl mix flour, sugar, soda, powder, and salt. Next using a pastry blender, incorporate butter into flour mixture until butter is the size of peas or smaller. Add buttermilk until all flour is moistened. Turn onto a floured surface and flour the top of the dough as well. Either roll out with a rolling pin or flatten with hands, until 3/4" thick. Either cut into squares or cut with a round biscuit cutter. Makes 8-12 depending on size and thickness. Bake in a 450u0b0F oven for 12-16 minutes.
- For the gravy:
- Cook sausage until cooked through. Drain drippings, reserving 3 tablespoons only. Place drippings back in the pan with the sausage and add flour. Stir for approximately 2 minutes to cook out the flour taste. Add milk, pepper, salt and nutmeg. Bring to a boil and stir often until it is thickened. Pour over hot biscuits.
