Black Bean And Rice Salad
- 1 cup Long Grain Rice
- 2 cans Black Beans, 16 Oz Each, Drained And Rinsed
- 2 cans Corn, 16 Oz Each, Drained
- 2 whole Sweet Red Peppers, Stem And Seeds Removed Then Diced
- 1/2 cups Red Onion, Diced Small
- 1/2 cups Fresh Parsley, Chopped
- 1/2 cups Olive Oil
- 1/4 cups Red Wine Vinegar
- 2 Tablespoons Lemon Juice
- 1 clove Garlic, Minced
- 1 Tablespoon Chili Powder
- 1 teaspoon Salt
- 1/4 teaspoons Black Pepper
- Cook rice according to package instructions. When done drain it and rinse it. Mix beans, rice, corn, peppers, onion and parsley in a large bowl.
- In a small bowl, whisk together oil, vinegar, lemon juice, garlic and spices. Pour over salad and toss. Taste and adjust seasonings. Chill in refrigerator.
