Chocolate Toffee Banana Cookies
- 2 teaspoons Instant Coffee Granules
- 2 teaspoons Vanilla
- 1 box (about 18 Oz. Size) Chocolate Cake Mix
- 1/2 cups Butter, Softened
- 2 Eggs
- 2 Brown Bananas, Smashed
- 3/4 cups Flour
- 1/8 teaspoons Salt
- 1 cup Mini Chocolate Chips
- 1/2 cups Toffee Bits
- Preheat oven to 350u0b0F.
- In a bowl, stir together coffee and vanilla until dissolved. Set aside. In a large mixing bowl, lightly beat cake mix, butter, coffee vanilla, and eggs until combined.
- Add the bananas, flour, and salt and beat gently. Stir in the chocolate chips and toffee bits by hand. Drop by large spoonfuls onto a baking sheet. Bake 12-14 minutes.
- Cool on sheet for 1 minute before removing to a cooling rack. Store in a loosely sealed container. Makes 24-36 cookies, depending on how big you make them.
