Jalapeno Corn Waffles With Sriracha Maple Syrup

  1. Preheat your waffle iron.
  2. In a large bowl, combine the cornmeal, flour, baking powder, corn, jalapeno, salt, cheese and brown sugar. Mix to combine, then set aside.
  3. In a separate bowl, add the melted butter, milk, oil and the egg. Beat until well combined. Make a well in the center of the dry ingredients, add the wet ingredients and mix until just barely combined.
  4. Spray waffle iron with cooking spray (if recommended by manufacturer's instructions), add batter and cook in waffle iron according to manufacture's specifications. When each waffle is done, remove from the waffle iron and place on a plate while you continue with the rest of the batter.
  5. Mix together the maple syrup and sriracha and serve with the waffles.
