Cornbread Salad With Mango Honey Lime Dressing
- FOR THE SALAD:
- 6 cups Prepared Cornbread, Cooled And Cubed
- 6 whole Roma Tomatoes, Diced
- 2 whole Avocados, Peeled, Pitted And Diced
- 1/2 whole Vidalia Onion, Diced
- Fresh Cilantro Sprigs, For Garnish (optional)
- FOR THE DRESSING:
- 1 whole Mango (peeled And Pit Removed)
- 1/2 cups Roasted Red Pepper (jarred Is Fine)
- 2 whole Limes, Juiced
- 1/4 cups Olive Oil
- 2 Tablespoons Honey
- 3 Tablespoons Fresh Cilantro
- 3 cloves Garlic, Peeled
- 1/2 whole Jalapeno Pepper, Seeded
- Salt And Pepper, to taste
- Place all of the salad ingredients (except the cilantro garnish) into a large bowl and gently toss.
- In a food processor or blender, combine all dressing ingredients and process for about a minute. Take a taste and add salt and pepper to your liking.
- Drizzle dressing over salad, toss and serve. Garnish with small cilantro sprigs.
