Snake Gourd Paretal
- 3 Tablespoons Vegetable Oil
- 1 teaspoon Mustard Seeds
- 1/2 teaspoons Cumin Seeds
- 1/2 teaspoons Fennel Seeds
- 1 teaspoon Red Chili Flakes
- 1/4 teaspoons Turmeric Powder
- 1 sprig Curry Leaf (I Didn't Have Any But Highly Recommended!)
- 1 piece Ginger (Thumb-sized), Sliced
- 1 whole Large Red Onion, Peeled And Chopped
- 1 whole Snake Gourd, Peeled, Pith Removed And Cut Into 1-inch Pieces
- 1 whole Tomato, Chopped
- 1 teaspoon Salt To Taste
- Heat up oil on medium heat. Toss in spices to toast for a brief minute until mustard seeds begin to pop and everything becomes fragrant.
- Add in ginger and onions and stir-fry for 1 minute, until the onions are translucent.
- Scatter in snake gourd and tomatoes. Add salt and a splash of water. Cover and leave to steam for 5 minutes. Stir every minute or so. Add more water if necessary.
- Once the gourd is tender, dish up!
