Cucumber And Tomato Summer Salad
- FOR THE SALAD:
- 1 whole Large Cucumber, Peeled, Sliced
- 1-1/2 cup Tomatoes, Sliced (I Used Heirloom Tomatoes)
- 1/4 cups Red Onion, Sliced In Strips
- 1 dash Salt
- 1 dash Pepper
- 5 whole Basil Leaves, Sliced Thin
- 5 Kalamata Olives
- 1 ounce, weight Feta Cheese, Fat Free, Crumbled
- FOR THE DRESSING:
- 1/2 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Red Wine Vinegar
- 1/4 teaspoons Parsley
- 1/8 teaspoons Oregano
- On a plate, add cucumbers, tomatoes and onions; add salt and pepper. Top with basil leaves and olives.
- In a bowl, add olive oil, vinegar, parsley and oregano; mix well. Drizzle dressing over salad and top the salad with feta cheese.
