Coleslaw Dressing And Coleslaw Salad For A Crowd
- FOR THE DRESSING:
- 1 whole Egg, Beaten
- 1 cup Water
- 1 cup Half-and-Half Cream
- 1 cup Sugar
- 1/3 cups Brown Sugar
- 1/8 cups Flour
- 1/8 cups Cornstarch
- 1 teaspoon Pepper
- 1 teaspoon Salt
- 2 cups Mayonnaise Or Miracle Whip
- 2 Tablespoons Dill (optional)
- FOR THE SALAD:
- 3 heads Cabbage, Shredded
- 2 whole Carrots, Shredded
- 3 stalks Green Onions, Sliced
- In a saucepan, beat the egg lightly. Whisk in the water, cream, sugars, flour, cornstarch, salt and pepper. Bring to a boil and cook for 2 minutes. Cool completely, then stir in the mayonnaise and dill. Cover tightly and store in the refrigerator for up to a week.
- To prepare a salad, mix the salad ingredients together with the dressing in a very large bowl. Serves 40-50 people.
