Fresh Plum Cake
- 1 pound Red Or Italian Plums
- 1-1/2 cup Flour
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 1/2 teaspoons Nutmeg
- 3/4 cups Sugar
- 5 Tablespoons Butter
- 1/2 cups Milk
- 2 whole Eggs
- 1 teaspoon Vanilla Extract
- Whipped Cream, To Serve (optional)
- Heat oven to 325u0b0F. Butter and flour a 9" square pan. Cut plums into thin wedges.
- Combine flour, baking powder, salt, nutmeg, and sugar. Cut in the butter until the mixture resembles coarse meal.
- Combine the milk, eggs, and vanilla. Stir into dry ingredients until moistened. Pour into prepared pan.
- Push plums into batter in rows, leaving skin side exposed. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely in the pan.
- Serve with whipped cream if you like.
