Apple Streusel Cake With Cream Cheese Glaze
- FOR THE CAKE:
- 1-1/3 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1/8 teaspoons Baking Soda
- 1 cup Granulated Sugar
- 3/4 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 1/3 cups Canola Oil
- 2 whole Eggs
- 1/4 cups Low-fat Buttermilk
- 1/4 cups Low Fat Sour Cream
- 1 teaspoon Vanilla Extract
- 1 cup Peeled, Diced Apple (1/4 Inch Dice)
- FOR THE STREUSEL:
- 3/4 cups Quick Cooking Oats
- 1/2 cups All-purpose Flour
- 1/2 cups Granulated Sugar
- 1/3 cups Butter Or Margarine
- 1/2 teaspoons Cinnamon
- 1/2 cups Walnuts
- FOR THE GLAZE:
- 3 ounces, weight Softened Cream Cheese
- 1-1/2 Tablespoon Softened Butter Or Margarine
- 2/3 cups Powdered Sugar
- 1/4 teaspoons Vanilla
- 3 Tablespoons Milk
- Preheat oven to 325 F. Spray a 9-inch spring form pan with non-stick cooking spray and set aside.
- For the cake:
- In a large bowl, whisk together all of the dry ingredients (flour through nutmeg). Make a well in the center of the dry ingredients and pour all of the wet ingredients in (that's everything else on the cake list except for the apples). Slowly start mixing the wet ingredients into the dry and stir until just combined. Toss in the apple pieces and stir.
- Pour batter into the prepared pan.
- In a small bowl, stir together all of the ingredients for the streusel. Continue to cut the mixture together until the butter pieces are small chunks that are evenly distributed throughout mixture. Sprinkle the streusel over top of the cake. Bake the cake for 45-55 minutes or until a toothpick comes out clean when inserted. Remove from oven and cool.
- Before serving, whip the cream cheese and margarine together until smooth. Stir in powdered sugar, vanilla and milk until smooth and runny. Add the milk slowly until desired drizzling consistency is reached. Un-hinge the springform pan and place cake on a serving platter. Drizzle with glaze and serve.
- Recipe notes: In the cake portion of the recipe, feel free to substitute milk for the buttermilk and sour cream if you don't have those ingredients on hand. Also, this recipe makes A LOT of streusel. If you don't like a thick layer of it on you cake feel free to halve the streusel recipe.
