Cajun-Fried Potato Salad
- 4 whole White Potatoes, Cut Into 1" Cubes
- 1/2 teaspoons Salt
- 1/2 teaspoons Ground Black Pepper
- 1/4 teaspoons Onion Powder
- 1/4 teaspoons Garlic Powder
- 1/8 teaspoons Ground Cumin
- 1/8 teaspoons Ground Cayenne
- Oil, For Frying
- 1 pound Bacon, Crisp Fried And Crumbled
- 1 cup Chopped Onion
- 1 cup Chopped Celery
- 1/2 cups Chopped Dill Pickles
- 1/2 cups Chopped Sweet Pickles
- 3 Tablespoons Yellow Mustard
- 1-1/2 cup Mayonnaise, More Or Less To Taste
- 2 teaspoons Louisiana Hot Sauce
- 1. Drop cubed potatoes into a large pot of boiling salted water. Cook until fork tender, but not mushy, about 7 minutes. Drain.
- 2. Meanwhile, in a bowl mix salt, pepper, onion powder, garlic powder, ground cumin and ground cayenne. Toss on potatoes to coat.
- 3. Heat about 1" oil in a wok or deep skillet to 350 degrees F. Add the potatoes and fry until golden brown on all sides. Remove and drain.
- 4. In separate bowl, combine all remaining ingredients. Add potatoes and mix to combine.
- Serve warm or cold.
