Cajun-Fried Potato Salad

  1. 1. Drop cubed potatoes into a large pot of boiling salted water. Cook until fork tender, but not mushy, about 7 minutes. Drain.
  2. 2. Meanwhile, in a bowl mix salt, pepper, onion powder, garlic powder, ground cumin and ground cayenne. Toss on potatoes to coat.
  3. 3. Heat about 1" oil in a wok or deep skillet to 350 degrees F. Add the potatoes and fry until golden brown on all sides. Remove and drain.
  4. 4. In separate bowl, combine all remaining ingredients. Add potatoes and mix to combine.
  5. Serve warm or cold.
