Gluten Free Banana Bread
- 1 cup Oil
- 2 cups Granulated Sugar
- 4 whole Eggs
- 2 cups Mashed Ripe Bananas
- 1/2 teaspoons Vanilla Extract
- 1 cup Brown Rice Flour
- 2/3 cups Potato Starch
- 1/3 cups Tapioca Starch
- 1 teaspoon Xanthan Gum
- 1 Tablespoon Cinnamon
- 2-1/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 cup Chopped Walnuts
- Preaheat oven to 350u0b0F. In a large bowl or the bowl of your stand mixer, mix together the oil and sugar. Add the eggs, bananas, and vanilla extract and mix well.
- In a separate bowl, mix together all of the dry ingredients (everything else except the nuts) with a whisk. Add the dry mixture to the wet mixture and mix until blended. Add the nuts and stir until they are incorporated.
- Divide mixture between two medium loaf pans and bake for 55-65 minutes or until a nice crust has formed and a toothpick comes out clean. Cool in pans and slice and serve. Or slice almost immediately and begin to devour. Your choice.
