Taco Salad
- 2 lb. ground beef
- 2 pkg. taco seasoning
- 1 large onion
- 2 green peppers
- 2 heads lettuce
- 1 can black olives
- 1 large container sour cream
- 2 bottles Catalina dressing
- 2 bags tortilla chips
- 2 cans red kidney beans
- 4 tomatoes
- 12 oz. shredded Cheddar cheese
- Cook ground beef according to directions on taco seasoning package.
- Drain and set aside to cool.
- Chop lettuce, onion, green peppers, olives and tomatoes; mix well.
- Crush tortilla chips; add to mixture.
- Add kidney beans and ground beef.
- Mix sour cream with Catalina dressing.
- Pour over salad and mix well.
- Top with shredded Cheddar cheese.
- Serves 15 to 20 people,
- For smaller portion, cut recipe in half.
