Chocolate Chip Cake
- 1 3/4 c. boiling water
- 1 c. uncooked oatmeal
- 1 c. lightly packed brown sugar
- 1 c. granulated sugar
- 1/2 c. margarine
- 2 large eggs
- 1 3/4 c. unsifted flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 Tbsp. cocoa
- 1 large pkg. chocolate chips
- 3/4 c. chopped walnuts (optional)
- Pour boiling water over oatmeal in large mixing bowl.
- Let stand at room temperature 10 minutes.
- Add both sugars and margarine.
- Add eggs and beat.
- Add flour, baking soda, salt and cocoa.
- Mix.
- Add half the chocolate chips and blend in.
- Pour batter into greased 9 x 13-inch pan.
- Sprinkle remaining chocolate chips and walnuts over top.
- Bake 35 to 40 minutes at 350u0b0.
