Layered Potato-Apple-Yam Bake
- 3 whole Yukon Gold Potatoes
- 1 whole Yam
- 1 whole Granny Smith Apple
- 1/2 cups Cream Cheese
- 1/4 cups Butter
- 1 teaspoon Sea Salt
- 1/4 cups Shredded Guyere Or Fontina Cheese
- Preheat oven to 350 degrees.
- Cook yam in the microwave for 1 to 1 1/2 minutes. Set aside to cool.
- Peel and quarter Yukon potatoes.
- Boil potatoes until fork tender. Drain and cool. Peel, core and thinly slice apple. Peel and slice the yam.
- Spray a 9-inch round baking pan with Pam.
- Layer the following ingredients in the pan:
- slices of yam
- dollops of cream cheese and half the butter
- apple slices
- remaining cream cheese and butter
- cubed Yukon potatoes
- sprinkle with sea salt and shredded cheese
- Bake at 350 degrees for 30 minutes. Devour!
