Cran-Apple Millet Breakfast Bake
- 1-1/3 cup Water
- 1/2 cups Millet
- 1/2 teaspoons Salt
- 1 Tablespoon Coconut Oil
- 1 cup Whole Cranberries, Fresh Or Frozen
- 1 cup Walnuts, Chopped
- 2 whole Apples, Chopped
- 2 Tablespoons Coconut Sugar
- 1/2 cups Unsweetened Applesauce
- 1 teaspoon Cinnamon
- 1/4 teaspoons Ground Ginger
- In a small sauce pot bring water to a boil. Add millet and salt, reduce heat and cover. Simmer for 15 minutes. Remove from heat and add remaining ingredients. Stir to combine.
- Scoop into a ceramic baking dish and cover with a lid or foil. Bake at 375u0b0F for 30 minutes. Remove foil and bake another 10-15 minutes till the top is golden brown.
- Serve in cups with a dollop of cream, if desired. This goes well with a nice hot cup of herbal tea.
