Oatmeal Cranberry White Chocolate Chip Cookies
- 2/3 cups Butter, Softened
- 2/3 cups Brown Sugar
- 2 Eggs (large)
- 1-1/2 cup Old Fashioned Oats
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 5 ounces, weight Dried Cranberries
- 2/3 cups White Chocolate Chips
- 1. Preheat oven to 375 F.
- 2. Using an electric mixer, beat butter and sugar together in a medium-sized mixing bowl until light and fluffy. Add eggs and mix well. Set aside.
- 3. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add this to the butter mixture in several additions, mixing well after each addition.
- 4. Stir in dried cranberries and white chocolate chips.
- 5. Drop the dough by rounded teaspoonfuls onto un-greased cookie sheets.
- 6. Bake for 10-12 minutes or until golden brown. Cool on a wire rack.
- Yields: 55 cookies if using a small cookie scoop.
