Oatmeal Cranberry White Chocolate Chip Cookies

  1. 1. Preheat oven to 375 F.
  2. 2. Using an electric mixer, beat butter and sugar together in a medium-sized mixing bowl until light and fluffy. Add eggs and mix well. Set aside.
  3. 3. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add this to the butter mixture in several additions, mixing well after each addition.
  4. 4. Stir in dried cranberries and white chocolate chips.
  5. 5. Drop the dough by rounded teaspoonfuls onto un-greased cookie sheets.
  6. 6. Bake for 10-12 minutes or until golden brown. Cool on a wire rack.
  7. Yields: 55 cookies if using a small cookie scoop.
