Jamaican Easter Bun
- 2 c. brown sugar
- 1 c. milk
- 3 c. all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 2 eggs
- 1/2 tsp. ginger
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1/4 c. raisins
- 1/4 c. mixed candied fruits
- 1 Tbsp. oil
- Sift together dry ingredients, except sugar.
- Beat eggs; mix with milk, sugar and oil.
- Mix into dry ingredients, add fruits. Bake in greased loaf tin at 350u0b0 for 30 minutes, then reduce temperature to 300u0b0 and continue baking for 1/2 hour or more, until a knife inserted comes out clean.
- Wrap with plastic wrap while still warm to retain moisture.
- This will keep several weeks in refrigerator.
- It is better if it sets a day or two before serving.
- It also freezes very well.
