Cherry Chocolate Chip Baked Oatmeal

  1. Preheat oven to 350 F. Spray an 8 x 8 baking dish with cooking spray; set aside.
  2. In a bowl add oats, baking soda and salt. Mix together. Pour into prepared baking dish. Top with cherries.
  3. In a separate bowl, add almond milk, vanilla extract, maple syrup and coconut oil; whisk together until combined. Slowly pour over the oat and cherry mixture. Sprinkle with chocolate chips.
  4. Bake for 30-35 minutes or until lightly brown on top and oatmeal is set.
