Cherry Chocolate Chip Baked Oatmeal
- 2 cups Rolled Oats (I Used Gluten Free)
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Pitted Cherries, Frozen Or Fresh, Cut In Half
- 1-1/2 cup Unsweetened Vanilla Almond Milk
- 2 teaspoons Vanilla Extract
- 1/4 cups Maple Syrup
- 2 Tablespoons Coconut Oil, Melted
- 2 Tablespoons Mini Chocolate Chips
- Preheat oven to 350 F. Spray an 8 x 8 baking dish with cooking spray; set aside.
- In a bowl add oats, baking soda and salt. Mix together. Pour into prepared baking dish. Top with cherries.
- In a separate bowl, add almond milk, vanilla extract, maple syrup and coconut oil; whisk together until combined. Slowly pour over the oat and cherry mixture. Sprinkle with chocolate chips.
- Bake for 30-35 minutes or until lightly brown on top and oatmeal is set.
