Stuffed Green Peppers
- 5 or 6 medium green peppers
- 3/4 c. uncooked brown rice
- 1 lb. lean ground beef
- 1 medium onion, chopped
- 1 (8 oz.) can tomato sauce
- 1/4 tsp. dried basil
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. instant beef bouillon
- pepper to taste
- Remove tops and seeds from peppers.
- In a large kettle, bring water to a boil.
- Cook peppers for 5 minutes.
- Remove and drain. Cook rice according to package directions.
- In a skillet brown beef and onion.
- Drain.
- Add tomato sauce, herbs, salt and pepper. Cook 5 minutes.
- Stir in rice.
- Stuff peppers with rice mixture. Place upright in shallow pan (baking dish).
- Bake at 375u0b0 for 15 or 20 minutes.
- Yields 5 to 6 servings.
- Leftover peppers will freeze well.
