Easy Italian Potatoes

  1. Wash the potatoes but do not peel them. Cut potatoes into twelfths and place in a microwave safe bowl. Microwave on high for 5 to 10 minutes to remove moisture. When they start to look fluffy take them out and toss with the oil. Then add the salad dressing mix and toss until coated.
  2. Grill method: Cut a large piece of tin foil and coat one side with cooking spray, pour the coated potatoes into the middle of it and seal it up like a pouch. Place on preheated grill over medium high heat and cook for approximately 20 minutes, turning over once during cooking.
  3. Conventional oven method: Preheat oven to 450F. Spray a cookie sheet with cooking spray, place potatoes on sheet in a single layer and bake for 20 minutes until crispy on the outside and fluffy on the inside.
