Jiffy Mexican Lasagne
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1 (8 oz.) can tomato sauce
- 1 (8 oz.) Ricotta or cottage cheese
- 1 egg
- 2 Tbsp. diced green chilies
- 4 tortillas, quartered (preferably flour)
- 4 oz. sharp Cheddar cheese, grated
- 4 (1 oz.) slices Mozzarella
- 1 c. sour cream
- 1/3 c. sliced ripe olives
- Combine beef, taco seasoning and tomato sauce in a bowl, cover with wax paper and cook on High setting in microwave oven 7 minutes (turn bowl a 1/2 turn after 3 1/2 minutes unless you have a turntable).
- In 1 1/2-quart shallow baking dish, layer half of meat mixture and arrange Mozzarella slices on top.
- Combine Ricotta, egg and chilies and spread over cheese.
- Arrange tortillas over the Ricotta mix.
- Top tortillas with rest of the meat mixture.
- Cover with waxed paper and cook in microwave 7 minutes. Turn after 3 1/2 minutes.
- Remove waxed paper and sprinkle with Cheddar cheese, cook 2 minutes.
- Spread with sour cream and olives and cook 1 minute.
