Glazed Lemon Cookies

  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper, or spray with non-stick.
  2. Combine flour, baking powder and salt in a small bowl; whisk and set aside.
  3. In a small bowl, add sugar and lemon zest. Rub them together with your fingers until mixed well and fragrant.
  4. Beat butter into the sugar/lemon mixture until light and fluffy. Beat in egg and the vanilla until smooth. Slowly beat in the flour mixture, until blended.
  5. Roll dough into 1/2-inch balls and place on prepared baking sheets. Gently flatten with the palm of your hand.
  6. Bake for around 12 minutes, until cookies are just set. Cool on the baking sheet for a couple minutes, then transfer to a cooling rack.
  7. For the glaze, in a medium bowl combine powdered sugar and lemon juice. Once cookies are cooled, completely drip the top of the cookie in the glaze, or spread on top with a knife.
  8. Enjoy!
