Chicken With Olives And Lemon
- 1 (3 lb.) chicken, cut into serving pieces
- 1 Tbsp. cumin
- 1 tsp. paprika
- 1 tsp. powdered ginger
- 1/2 to 1 tsp. turmeric
- 1 tsp. cayenne pepper or 2 tsp. medium salsa
- 4 cloves garlic, chopped
- 1/2 bunch cilantro
- juice of 2 lemons
- 1/2 c. flour or a little less
- 1 c. green olives or less (stuffed)
- 1 lemon, cut into wedges
- 1 c. chicken broth
- Preheat oven to 325u0b0.
- Coat chicken with spices, pepper, garlic and cilantro.
- Place in baking dish and pour lemon juice over it.
- Sprinkle chicken with flour and mix to coat the chicken pieces.
- Add olives, lemon wedges and broth to dish.
- Bake for about an hour.
- Serve with rice or couscous.
