Lemon Mascarpone Parfaits
- 16 ounces, weight Mascarpone Cheese
- 1-1/2 cup Lemon Curd
- 1 cup Crushed Cookies (preferably Biscoff Or Ginger Snaps)
- 1 cup Creme Fraiche
- 6 whole Cookies, For Garnish (optional)
- Set aside individual serving dishes or glasses for the parfaits. (The number of parfaits you make will depend on the size of the dishes/glasses used. If you use smaller glasses, you'll get about 6-8 mini parfaits.)
- In the bowl of your mixer, beat together the mascarpone cheese and lemon curd until smooth and creamy, about 2-3 minutes.
- Spoon 1-2 tablespoons of crushed cookies into each individual serving dish or glass.
- Divide the lemon mascarpone filling evenly between the serving glasses, topping each layer of cookie crumbs with about 1 cup of the filling.
- Top the lemon mascarpone layer with a dollop of creme fraiche, and garnish with a cookie, if using.
- Refrigerate at least 1 hour before serving, and enjoy!
