Sicilian Fennel And Orange Salad
- 2 ounces, fluid Fresh-squeezed Orange Juice (more Or Less Based On The Sweetness Of Your Orange)
- 3 ounces, fluid Extra Virgin Olive Oil
- 1/2 teaspoons Salt
- 1/4 teaspoons Ground Black Pepper
- 1 bulb Fennel, Bottom And Tops Removed, And Cut Into Thin Pieces
- 2 whole Oranges, Peels Cut Away Then Sliced Into Thin Rounds
- 4 ounces, weight Salad Greens
- 1/4 cups Black Italian Olives, Pitted And Rough Chopped
- To make the dressing, combine the orange juice, olive oil, salt, and ground black pepper in a small bowl and mix to combine. Taste and adjust seasoning as needed.
- Add the fennel, oranges, greens, and olives into a a large bowl. Pour the dressing over the mixture and gently toss to combine.
- Divide and serve on individual plates.
