Mexican Meat Pie

  1. In skillet, brown ground beef and onion; drain.
  2. Sprinkle with cornstarch; blend in enchilada sauce, parsley and drained mushrooms.
  3. Set aside.
  4. Put bottom crust in deep dish 9-inch pie plate.
  5. Spread half of eggs in crust.
  6. Spoon in meat mixture; top with cheese, then spread the rest of the eggs over cheese.
  7. Put on top crust; seal and flute edge.
  8. Cut slits in top for steam escape. Bake at 350u0b0 for 50 to 55 minutes.
  9. Let stand 15 minutes before cutting.
  10. Makes 8 servings.
