Hash Brown Casserole
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped red pepper
- 1/4 tsp. each: salt and pepper
- 1 (32 oz.) frozen hash browns
- 1 Tbsp. melted butter or margarine
- 1 c. sour cream
- 1 (10 3/4 oz.) can cream of chicken soup
- 1 c. crushed corn flakes
- 2 c. shredded cheese
- 1/4 c. melted butter
- Grease a 9 x 13-inch baking dish.
- In a bowl, combine cheese, soup, sour cream, onion, peppers, 1/4 cup butter, salt and pepper; mix up.
- Fold in hash browns; turn into greased casserole.
- Toss together corn flakes and 1 tablespoon of melted butter; sprinkle this over the potato mixture.
- Bake at 350u0b0 for 1 hour until casserole is golden brown and potatoes are tender.
- Serves about 6 or 8.
