Cajun Potato Wedges
- FOR THE POTATOES:
- 2 whole Large Russet Potatoes
- 3 Tablespoons Olive Oil
- 1 can Olive Oil Cooking Spray
- FOR THE SPICE MIXTURE:
- 2 teaspoons Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Italian Seasoning
- 1/2 teaspoons Pepper
- 3/4 teaspoons Salt
- 1 teaspoon Cayenne Pepper
- 1. Preheat oven to 425 F. Slice potatoes into 1/2 inch thick wedges that are half the length of the potato.
- 2. Make spice mixture: combine all spices and mix together in a small bowl.
- 3. Spray a rimmed cookie sheet with olive oil cooking spray. Place potatoes on the cookie sheet. Toss the potatoes with the olive oil. Sprinkle spice mixture over potatoes and toss. Spread them into a single layer.
- 4. Cook for 25 minutes. Flip them over and cook for another 5 minutes.
