Light Old Fashioned Fruit Cake
- 4 c. all-purpose flour
- 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 1/2 lb. pecans
- 1 3/4 c. chopped candied pineapple
- 1 lb. golden raisins
- 3/4 lb. chopped candied cherries
- 1 c. butter
- 1 1/4 c. sugar
- 6 eggs
- 1 oz. bottle brandy flavoring
- Mix until all fruit and nuts are well coated with dry ingredients.
- Set aside.
- Cream butter.
- Gradually add sugar; cream until light and fluffy.
- Add eggs 1 at a time, beating well after each.
- Add brandy flavoring to mixture.
- Mix with the fruit, nut, flour mixture.
- Mix until well blended.
- Turn into 10-inch tube pan.
- Bake 1 1/2 hours at 275u0b0.
- About 1/2 hour before cake is done, brush top with honey.
- Decorate with fruit and nuts.
