S’Mores Cookies

  1. Preheat oven to 325u0b0F.
  2. 1. Cream soft butter and sugar in a stand mixer until light and fluffy.
  3. 2. Add vanilla extract and mix into the butter and sugar.
  4. 3. Add eggs and incorporate thoroughly.
  5. 4. Measure all dry ingredients into a seperate bowl and mix together.
  6. 5. Add mixed dry ingredients to butter and egg mixture
  7. mix until blended.
  8. 7. Chill for 15 minutes in the refrigerator.
  9. 8. Scoop 1 1/2 ounce scoop on to a baking sheet sprayed with pan release.
  10. 9. Flatten cookies until they are 1/4 inch thick and sprinkle tops with additional sugar. Bake cookies for 16 minutes in a preheated 325u0b0F oven.
  11. 10. Once baked, place a cookie upside down on a microwave safe plate and top with marshmallows.
  12. 11. Microwave for 12-15 seconds or until marshmallow is soft.
  13. 12. Top the hot marshmallow with a milk chocolate candy bar or Reese's and top with another graham cookie.
  14. 12. Melt chocolate chips in the microwave in short bursts (15 seconds) until smooth. Place in a plastic bag or pastry bag and squeeze over the top of the S'mores.
  15. This recipe yields 24 sandwich cookies.
