Honey Ginger Cookies
- 3 cups All-purpose Flour
- 1 cup Sugar
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Ginger
- 1 whole Lemon, Zested
- 1/2 cups Honey
- 3/4 cups Canola Oil
- 3/4 cups Sprite Or Other Lemon Lime Soda
- Preheat oven to 350u0b0F.
- In a large mixing bowl, add in the flour, sugar, baking soda, ginger, and lemon zest; mix and set aside.
- In a separate mixing bowl combine the honey, canola oil, and Sprite.
- Pour the wet ingredients into the dry ingredients and mix until you get a shiny cookie dough. Drop the cookie dough by the spoonful onto a lightly greased baking sheet.
- Bake in the preheated oven for about 12 to 15 minutes. Then remove from the oven and let cookies stand on baking sheets for a couple of minutes before removing them from the pans to cool on wire racks.
- Serve with a cup of coffee or tea.
