Baked Stuffed Potatoes(Mihshi Batata)
- 4 lb. potatoes
- 1 lb. ground beef
- 1 onion, finely chopped
- 1/2 c. pine nuts
- 1/2 c. Crisco
- 1 tsp. salt
- 1/2 tsp. each: pepper and cinnamon
- 2 c. oil (for browning)
- 2 1/2 c. water
- 1/2 c. lemon juice
- 1 tsp. salt
- Peel and wash the potatoes.
- Make a hole on one side of the potato and scoop out the pulp, leaving a shell 1 cm. thick.
- Brown the potatoes lightly in hot oil; set aside.
- Saute the pine nuts in Crisco until golden brown; remove from the pan and add the meat and onions to the saucepan, adding salt, pepper and cinnamon.
- Cook for 15 minutes.
- Add the pine nuts to the meat and stuff the potatoes completely with the meat mixture.
- Arrange the potatoes in an ovenproof dish.
- Add water, 1 teaspoon salt and lemon juice.
- Bake for 20 minutes at 350u0b0.
- Serve hot with rice.
