Microwave Chicken And Dumplings
- 2 Tbsp. butter or margarine
- 1/4 c. chopped onion
- 2 Tbsp. chopped celery
- 1 small clove garlic, minced
- 2 Tbsp. flour
- 2 c. chicken broth
- 1/2 tsp. sugar
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. basil leaves
- 1 bay leaf
- 2 Tbsp. chopped parsley
- 1 broiler-fryer, cut in serving pieces
- Basil Dumplings (recipe follows)
- 1 (10 oz.) pkg. frozen green peas
- Put butter, onion, celery and garlic into 3-quart glass baking dish.
- Cook, uncovered, until crisp-tender, 2 1/2 to 3 1/2 minutes at High; stir after 1 minute.
- Sprinkle flour over vegetables and mix well.
- Add chicken broth, sugar, salt, pepper, basil, bay leaf and parsley; stir.
- Microwave, uncovered, 8 to 10 minutes at High or until thickened; stir occasionally.
