Choconana Peanut Butter Bread

  1. Preheat oven to 350 degrees F and lightly grease a standard loaf pan.
  2. Sift together first 4 ingredients in large bowl. Add egg whites and applesauce and stir to combine. Add oats and mashed bananas.
  3. In separate microwavable bowl, melt chips by heating at full power in 15-second increments, stirring after each, until melted. Add 1 cup of prepared batter to melted chocolate and mix well.
  4. In remaining (chocolate-free) batter, add peanut flour and mix well.
  5. In a loaf pan, alternate addition of peanut and chocolate batters. Swirl with a knife or long toothpick.
  6. Bake until top of loaf springs back when touched, about 45-5o minutes.
