Choconana Peanut Butter Bread
- 1-1/4 cup Whole Wheat Flour
- 1/2 teaspoons Salt
- 1/2 teaspoons Baking Soda
- 1/2 cups Brown Sugar (unpacked)
- 5 whole Egg Whites
- 3/4 cups Unsweetened Applesauce
- 1/2 cups Rolled Oats
- 2 whole Ripened Bananas, Mashed
- 1/3 cups Peanut Flour
- 1/2 cups Semisweet Chocolate Chips
- Preheat oven to 350 degrees F and lightly grease a standard loaf pan.
- Sift together first 4 ingredients in large bowl. Add egg whites and applesauce and stir to combine. Add oats and mashed bananas.
- In separate microwavable bowl, melt chips by heating at full power in 15-second increments, stirring after each, until melted. Add 1 cup of prepared batter to melted chocolate and mix well.
- In remaining (chocolate-free) batter, add peanut flour and mix well.
- In a loaf pan, alternate addition of peanut and chocolate batters. Swirl with a knife or long toothpick.
- Bake until top of loaf springs back when touched, about 45-5o minutes.
