Little ‘Big Mac’ Cookies

  1. Divide the vanilla frosting into two small bowls. If you like mayonnaise on your hamburgers, leave some of the frosting white and put that in a third bowl. Mix the red icing gel into one bowl of frosting to resemble ketchup and mix the yellow icing gel into the other bowl to resemble mustard. Set aside.
  2. Place the coconut and two drops of green food color into a jar or container with a lid. Shake vigorously to tint the coconut, which now resembles lettuce. Set aside.
  3. Take one Vanilla Wafer as the bottom of the bun and dab a small amount of ketchup (or mustard) on and place one of the Grasshopper fudge cookies (this is your hamburger) on top. Push it down a little so the frosting oozes out to the edge. On top of the hamburger, dab a small amount of the other condiment and place a pinch of the coconut on top for the lettuce. Again, press down a little so the frosting can be seen and help hold the cookie together. Add another Vanilla Wafer as the top bun.
  4. Brush the top of the bun with a little egg white and sprinkle it with sesame seeds. Let the egg white dry and viola, you have a little hamburger cookie.
  5. Note for those with sensitivities: This recipe contains raw egg whites. You can omit them if concerned.
