Ruth'S Chocolate Pound Cake
- 3 c. sugar
- 1 1/2 c. shortening
- 5 eggs
- 3 c. cake flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/2 c. cocoa
- 1 1/4 c. whole milk
- 1 tsp. vanilla
- 1 tsp. lemon extract
- In a large mixing bowl, cream
- sugar and shortening together well.
- Add eggs, one at a time, beating well after each addition. In another large bowl, mix flour, salt, baking powder and cocoa. Add dry mixture to creamed mixture alternately with milk.
- Stir in vanilla and lemon extract.
- Bake in a greased and floured tube pan at 325u0b0 for 1 1/2 hours or until cake tests done.
- Cool in pan for 10 minutes.
- Invert cake onto a cake rack.
- This is not a "hurry up" cake.
- You must beat the sugar mixture and each egg until mixture lightens.
- This is very important!!
