Pork Teriyaki
- 1 pork tenderloin (1 to 1 1/2 lb.)
- 1/4 c. bottled lemon juice
- 2 Tbsp. brown sugar
- 1 Tbsp. honey
- 1 Tbsp. soy sauce
- 1 tsp. chicken flavor bouillon granules
- 1 tsp. ground ginger
- 8 to 12 small red skinned potatoes, steamed
- 2 c. cole slaw (prepared with nonfat mayonnaise)
- Prepare outdoor grill for cooking and preheat broiler.
- Cut tenderloin lengthwise in half; don't cut all the way through.
- Open and spread flat.
- In small saucepan, over medium heat, combine lemon juice, honey, soy sauce, bouillon and ginger.
- Heat until blended.
- Place tenderloin on grill or broiler pan.
- Grill or broil tenderloin, 15 to 20 minutes or until cooked through, turning and basting frequently with soy mixture.
- To serve, slice tenderloin thinly.
- Accompany with potatoes and cole slaw.
- Serves 5. Per Serving:
