Loaded Oatmeal Cookie Bars
- 2 cups Rolled Oats
- 1-1/4 cup All-purpose Flour
- 1-1/4 cup Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Fine Sea Salt
- 1-1/4 cup Light Brown Sugar
- 2 whole Large Eggs
- 1/2 cups Unsalted Butter, melted
- 1/2 cups Canola Oil
- 1 Tablespoon Vanilla Extract
- 1/2 cups Butterscotch Chips
- 1/2 cups White Chocolate Chips
- 1/2 cups Dark Chocolate Chips
- 1/2 cups Walnuts, Chopped
- Preheat your oven to 375 F and line a 9x13-inch baking dish with parchment paper or spray with a non-stick spray. Set aside.
- In the bowl of your stand mixer with paddle attachment (or in a bowl with a handheld electric mixer) add the oats, flours, baking soda, baking powder, sea salt, brown sugar, eggs, butter, oil and vanilla extract. Mix until a dough comes together and no dry ingredients remain. Add all of the chips and the walnuts, and mix again on low speed until they are evenly dispersed.
- Pour the dough into your prepared baking dish. Press the dough into the pan so that the top is even. Place pan in the oven and bake for 18-23 minutes or until the top just begins to turn a golden brown color. Remove from heat and set aside to cool.
- Once the bars have cooled substantially, cut into bars and serve! Enjoy! Bars will keep in an airtight container for about a week.
