Lovely Raspberry Jam Cake
- 3 whole Eggs
- 1-1/2 cup Sugar
- 4 Tablespoons Butter
- 3 cups All-purpose Flour
- 11 ounces, fluid Raspberry Jam
- 1 Tablespoon Baking Powder
- Prepare a pan in which the cake will be baked. Choose one about 15 cm x 30 cm (or about 6 inches x 12 inches). Grease it with butter and dust with a little bit of all-purpose flour (1 tablespoon is enough). Or, as I did, line it with parchment paper. Preheat oven to 325u0b0F.
- Put eggs, sugar and butter into a mixer bowl and beat until all is turned into a cream. Then, drop that mixture into a large bowl,and gently mix in the all-purpose flour and jam. Add the baking powder and again stir gently.
- Transfer the mixture to the pan and bake for 25 to 30 minutes, or until an inserted fork comes out clean. Note: do not open the oven before 20 minutes of baking.
- I decided to add a little twist and use some cream cheese frosting! It gets even more delicious. You should try it!
