Low Carb Zucchini Roll-Ups

  1. Preheat oven to 400u0b0F.
  2. Wash zucchini. Slice each end off and slice lengthwise (about 1/8 inch).
  3. Add parchment paper to a baking sheet, coat with olive oil and place each zucchini slice on the sheet. Bake for 20 minutes (make sure to check every few minutes to ensure they do not burn, as the thinner you slice, the quicker it cooks).
  4. Meanwhile, whisk eggs with milk and scramble in a skillet. Set aside.
  5. Remove zucchini slices from oven and let cool for about 5-10 minutes.
  6. Add scrambled eggs to each slice (going lengthwise). Roll each slice and place in a ramekin or small baking dish coated with olive oil or nonstick spray. Top with shredded mozzarella cheese and bagel seasoning.
  7. Turn oven to low broil setting. Insert rolls and cook for another 2-3 minutes (or until cheese is melted). Remove and enjoy!
