Chocolate Cake Muffins

  1. Preheat the oven to 180 C.
  2. In a large bowl, combine the dry ingredients (flour, cocoa, coffee, baking powder, baking soda and salt).
  3. In a separate bowl, beat the eggs with sugar, vanilla and sour cream. Add the egg mixture into the dry ingredients bowl and mix until everything is incorporated and smooth.
  4. Line a 12-count standard size muffin pan with paper liners. Scoop batter into baking cups.
  5. Bake for 20 to 25 minutes (or until a toothpick inserted in the center comes out clean).
