Chocolate Cake Muffins
- 1-1/2 cup Flour
- 1/2 cups Cocoa Powder
- 1/2 teaspoons Ground Coffee Beans
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 3 Eggs
- 1 cup Sugar
- 1 teaspoon Vanilla Extract
- 7 ounces, weight Sour Cream
- Preheat the oven to 180 C.
- In a large bowl, combine the dry ingredients (flour, cocoa, coffee, baking powder, baking soda and salt).
- In a separate bowl, beat the eggs with sugar, vanilla and sour cream. Add the egg mixture into the dry ingredients bowl and mix until everything is incorporated and smooth.
- Line a 12-count standard size muffin pan with paper liners. Scoop batter into baking cups.
- Bake for 20 to 25 minutes (or until a toothpick inserted in the center comes out clean).
