Buttermilk Pancakes With Dulce De Leche Cream

  1. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt. Set it aside and then in another bowl mix together the buttermilk, egg yolk, and vanilla extract. Pour that into the flour mixture and stir to combine. Then in a separate bowl, add the egg whites and with an electric hand mixer, beat the egg whites until soft peaks begin to form. Then add the sugar and continue beating until thicker peaks begin to form.
  2. Stop beating and then pour half of the mixture into the batter. Mix well and then add the rest of the egg white mixture and blend it softly until everything mixes well. Once that is done, add the water and stir to combine.
  3. Set the batter aside and preheat your stove to medium heat. Spray a cooking pan with nonstick cooking spray. Then grab a 1/4 cup of batter and pour it onto the pan and let it cook on each side for about 3 minutes.
  4. For the dulce de leche cream, get a bowl and pour the heavy cream and dulce de leche. Then with an electric hand mixer, beat it until it is creamy and thick, like pudding. Then grab a pancake and spread some cream on top of it. You can add some pure maple syrup as well and enjoy!
